The Dexter Russell Traditional® 8" Butcher Knife is a full-sized, high-carbon steel butcher knife built for serious meat work. DEXSTEEL® is Dexter Russell’s proprietary American high-carbon steel, individually ground and honed at the factory to deliver a ready-to-work edge from the first cut. High-carbon steel takes a keener edge than most stainless options and re-sharpens easily on a steel or stone, but it requires proper care: hand-wash, dry immediately, and avoid leaving the blade wet or in contact with acidic foods.
