Smooth vs Coarse — Which Steel Do You Need?
A smooth (or "fine") steel, like this 7820, realigns a knife edge that has rolled with use. It does not remove metal, so your blade lives longer — but that also means it cannot bring back an edge that has actually dulled. Smooth steels are best used between every few cuts to keep an already-sharp knife performing at its peak.
A coarse No Work steel (model 7830) goes further. The aggressive cut pattern removes a light layer of metal with each pass, which pulls a working edge back to sharp without going to a stone. It is the right tool when your knife is no longer cutting cleanly and you do not have time to stop, strip down and stone-sharpen.
